When the oral microbiome becomes imbalanced, harmful bacteria can flourish and contribute to cavities, bad breath, and gingivitis. These oral microbes can also travel to other parts of the body and affect overall health. Studies indicate a significant overlap in bacterial species between the mouth and the colon, highlighting how oral health influences systemic health.

Serrano peppers: Serranos contain capsaicin, the compound that gives them heat and provides anti-inflammatory effects. Research suggests capsaicin can help prevent microbial dysbiosis.
Shiitake mushrooms: Shiitakes are rich in vitamins such as niacin and B6, and they offer antimicrobial properties that can reduce bacteria associated with gingivitis while helping preserve beneficial microbes.
Leeks: Leeks supply vitamins K and A and contain prebiotic fibers that feed beneficial bacteria, supporting a balanced microbiome and helping fight inflammation and infection.
Cilantro: Cilantro contains detoxifying and antibacterial compounds that may help balance the oral microbial community.
Ghee: Ghee is rich in fat-soluble vitamins like A, E, and K. It can support gut barrier function and may help reduce symptoms related to leaky gut, a condition sometimes associated with oral microbiome imbalance.

Dr. B’s Microbiome Omelet

Ingredients
- 1 medium serrano pepper (if too spicy, substitute with a green pepper), seeds removed and chopped
- 3 medium shiitake mushrooms, chopped
- 1 small leek, chopped
- 2 pasture-raised organic eggs
- 1/4 cup ground pork (grass-fed if possible), cooked
- 1/4 cup cilantro, chopped
- 1/2 tablespoon extra virgin olive oil
- 2 tablespoons basil pesto (made with olive oil, not hydrogenated oils)
- 1 teaspoon ghee
- 4 slices sheep pecorino fresco (semi-firm) — optional
- 2 teaspoons liquid or coconut aminos
- Sea salt and pepper to taste
Instructions
- Saute the chopped serrano (or green pepper), shiitake mushrooms, and leek in extra virgin olive oil until they begin to brown. Add the liquid or coconut aminos, stir to combine, then remove the vegetables from the pan and set aside.

- Thoroughly wash the frying pan used for the vegetables. Return the clean pan to the stove and add the ghee to melt.

- In a small bowl, lightly stir the eggs—do not fully blend the yolks and whites. Pour the egg mixture into the pan over medium heat. If using, place slices of pecorino on the eggs as they begin to set.

- When the eggs are nearly cooked through, add the sautéed vegetables and cooked ground pork on top. Fold the omelet over to enclose the filling and allow it to finish cooking for a minute or two.

- Remove the omelet from the pan and top with basil pesto and chopped cilantro. Season with sea salt and pepper to taste, then serve immediately.
